Monsooned Malabar is a coffee unlike any other, thanks to a unique process specific to India's Malabar coast. Historically, coffee travelling by wooden sailing ships to Europe was exposed to humid sea air for months, altering its characteristics. To replicate this, harvested beans (typically dry-processed) are spread in open-sided warehouses during the monsoon season (June-September). The humid winds cause the beans to swell, yellow, and lose almost all acidity, while developing a unique flavor profile. Expect a very heavy body, extremely low acidity, and notes of earth, spice (clove, black pepper), Baker's chocolate, nuts, and sometimes a hint of smoky or briny character. It's often used in espresso blends for its crema-boosting properties and mellow base.
S.795 (also known as Selection 795) stands as one of the most popular Arabica varieties in India and Southeast Asia. Developed from a cross between Kent and the S.288 variety, it is known for its high yields, large beans, and good resistance to leaf rust. S.795 produces a balanced cup with mild flavor notes, often with hints of mocha.
Cauvery (Catimor derivative) , the local Indian name for a Catimor variety, highlights its genetic origins. Like other Catimors, it was bred for high yield potential and strong resistance to coffee leaf rust. It is widely grown in India and contributes to a cup profile with a full body, mild acidity, and often a slightly nutty or spiced character.
Kent An early Typica selection from India, popular in Tanzania for its good cup quality and moderate disease resistance. It produces a classic, clean profile.
